1 cup couscous, cooked

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, chopped

1/4 cup Kalamata olives, sliced

1/2 cup feta cheese, crumbled

2 tbsp olive oil

1 tbsp lemon juice
-
1 tsp oregano

Salt & pepper to taste
Instructions

Cook couscous according to package instructions, let cool.

In a bowl, mix couscous with cucumber, tomatoes, onion, and olives.

Add olive oil, lemon juice, oregano, salt, and pepper. Toss well.

Top with feta before serving.
