Greek Couscous Salad: A Refreshing Mediterranean Classic

Ingredients

  • 1 cup couscous, cooked

  • 1 cup cucumber, diced

  • 1 cup cherry tomatoes, halved

  • 1/4 cup red onion, chopped

  • 1/4 cup Kalamata olives, sliced

  • 1/2 cup feta cheese, crumbled

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp oregano

  • Salt & pepper to taste


Instructions

 

  1. Cook couscous according to package instructions, let cool.

  2. In a bowl, mix couscous with cucumber, tomatoes, onion, and olives.

  3. Add olive oil, lemon juice, oregano, salt, and pepper. Toss well.

  4. Top with feta before serving.
