Ingredients

  • 2 cans (15 oz) white beans, drained and rinsed

  • 3 cups fresh spinach or kale

  • 2 tbsp olive oil

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 tsp oregano

  • 1/2 tsp paprika

  • Salt & pepper to taste


Instructions

 

  1. Heat olive oil in a skillet, add onion and cook until soft.

  2. Stir in garlic, oregano, and paprika for 1 minute.

  3. Add beans and cook for 5 minutes.

  4. Toss in greens, stirring until wilted.

  5. Season with salt and pepper, then serve warm.
