6 oz glass noodles (cellophane noodles)

1 cup cooked shrimp or chicken (shredded)

1 cucumber, thinly sliced

1 red bell pepper, thinly sliced

1 carrot, shredded

1/4 cup chopped peanuts

1/4 cup fresh cilantro

1/4 cup fresh lime juice

2 tbsp soy sauce

1 tbsp fish sauce (optional)

1 tbsp sugar

1 tsp sesame oil

Cook glass noodles according to package, drain and rinse under cold water.

In a large bowl, combine noodles, shrimp/chicken, cucumber, bell pepper, and carrot.

In a small bowl, whisk lime juice, soy sauce, fish sauce, sugar, and sesame oil.

Pour dressing over salad and toss well.

Garnish with peanuts and cilantro.
