Thai Glass Noodle Salad: A Flavorful and Refreshing Dish

Ingredients

  • 6 oz glass noodles (cellophane noodles)

  • 1 cup cooked shrimp or chicken (shredded)

  • 1 cucumber, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 carrot, shredded

  • 1/4 cup chopped peanuts

  • 1/4 cup fresh cilantro

  • 1/4 cup fresh lime juice

  • 2 tbsp soy sauce

  • 1 tbsp fish sauce (optional)

  • 1 tbsp sugar

  • 1 tsp sesame oil


Instructions

 

 

  1. Cook glass noodles according to package, drain and rinse under cold water.

  2. In a large bowl, combine noodles, shrimp/chicken, cucumber, bell pepper, and carrot.

  3. In a small bowl, whisk lime juice, soy sauce, fish sauce, sugar, and sesame oil.

  4. Pour dressing over salad and toss well.

  5. Garnish with peanuts and cilantro.
