Rinse and cook the sushi rice according to package instructions.
In a bowl, mix rice vinegar, sugar, and salt until dissolved.
Once the rice is cooked, gently fold in the vinegar mixture.
Preheat your oven to 350°F (175°C).
In another bowl, combine diced salmon, mayonnaise, Sriracha, and sesame oil.
Spread the sushi rice evenly in a greased baking dish.
Layer the salmon mixture on top of the rice, smoothing it out evenly.
Bake in the preheated oven for about 25-30 minutes until the top is golden.
Remove from the oven and let it cool slightly before garnishing with nori and green onions.
Serve warm, accompanied by extra Sriracha or soy sauce if desired.
