Ingredients

  • 2 cups sushi rice
  • 3 cups water
  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 8 ounces fresh salmon diced
  • 1/4 cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 teaspoon sesame oil
  • 1 sheet nori cut into strips
  • Green onions for garnish

Instructions

  • Rinse and cook the sushi rice according to package instructions.
  • In a bowl, mix rice vinegar, sugar, and salt until dissolved.
  • Once the rice is cooked, gently fold in the vinegar mixture.
  • Preheat your oven to 350°F (175°C).
  • In another bowl, combine diced salmon, mayonnaise, Sriracha, and sesame oil.
  • Spread the sushi rice evenly in a greased baking dish.
  • Layer the salmon mixture on top of the rice, smoothing it out evenly.
  • Bake in the preheated oven for about 25-30 minutes until the top is golden.
  • Remove from the oven and let it cool slightly before garnishing with nori and green onions.
