Ingredients

  • 200 g mixed dried fruit
  • 100 g glacé cherries
  • 150 g unsalted butter softened
  • 150 g brown sugar
  • 3 large eggs
  • 200 g all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • Zest of 1 orange
  • Juice of 1 orange
  • 100 g chopped walnuts or pecans optional

Instructions

  • Preheat the oven to 180°C (350°F). Grease and line a 9x13-inch bake tray.
  • In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Mix in the orange juice and zest.
  • In a separate bowl, sift together the flour, baking powder, and spices.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Gently fold in the dried fruit, glacé cherries, nuts (if using), and spices until evenly distributed.
  • Pour the batter into the prepared tray and smooth the top with a spatula.
  • Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the tray for 10–15 minutes before transferring to a wire rack.
  • Once completely cool, slice and serve dusted with icing sugar (optional).
