Ingredients
  

  • 200 g mixed dried fruit
  • 100 g glacé cherries
  • 150 g unsalted butter softened
  • 150 g brown sugar
  • 3 large eggs
  • 200 g all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • Zest of 1 orange
  • Juice of 1 orange
  • 100 g chopped walnuts or pecans optional

Method
 

  1. Preheat the oven to 180°C (350°F). Grease and line a 9x13-inch bake tray.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Mix in the orange juice and zest.
  4. In a separate bowl, sift together the flour, baking powder, and spices.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Gently fold in the dried fruit, glacé cherries, nuts (if using), and spices until evenly distributed.
  7. Pour the batter into the prepared tray and smooth the top with a spatula.
  8. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the tray for 10–15 minutes before transferring to a wire rack.
  10. Once completely cool, slice and serve dusted with icing sugar (optional).
