Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter
  • 1 cup buttermilk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour for gravy
  • 2 cups milk
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional

Method
 

  1. Preheat your oven to 450°F (232°C).
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cut the cold butter into the flour mixture until it resembles coarse crumbs.
  4. Add the buttermilk and mix until just combined.
  5. Turn the dough onto a lightly floured surface and gently knead it a few times.
  6. Roll out the dough to about 1-inch thick and cut into round biscuits.
  7. Place the biscuits on a baking sheet and bake for 12-15 minutes until golden brown.
  8. While the biscuits are baking, prepare the gravy. In a skillet, crumble and cook the sausage over medium heat until browned.
  9. Sprinkle the flour over the cooked sausage and stir to combine, cooking for about 1 minute.
  10. Gradually whisk in the milk, stirring continuously to avoid lumps.
  11. Simmer the gravy, seasoning with salt, black pepper, and optional cayenne to taste.
  12. Serve the biscuits warm, smothered in the sausage gravy.
