  • 2 lbs beef stew meat cut into 1-inch pieces
  • 1 cup fresh or frozen cranberries
  • 2 medium apples peeled and diced (Granny Smith recommended)
  • 4 medium carrots sliced
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Method
 

  1. Brown the beef in a large pot over medium-high heat.
  2. Remove the beef and sauté the onions and garlic.
  3. Add the carrots and apples, cooking for a few more minutes.
  4. Stir in cranberries, thyme, and bay leaf.
  5. Return the beef to the pot and pour in the beef broth.
  6. Bring the stew to a boil, then reduce to a simmer.
  7. Cover and let simmer for about 1.5 to 2 hours.
  8. Season to taste and serve hot.
