- 2 lbs beef stew meat cut into 1-inch pieces
- 1 cup fresh or frozen cranberries
- 2 medium apples peeled and diced (Granny Smith recommended)
- 4 medium carrots sliced
- 1 large onion chopped
- 3 cloves garlic minced
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Brown the beef in a large pot over medium-high heat.
Remove the beef and sauté the onions and garlic.
Add the carrots and apples, cooking for a few more minutes.
Stir in cranberries, thyme, and bay leaf.
Return the beef to the pot and pour in the beef broth.
Bring the stew to a boil, then reduce to a simmer.
Cover and let simmer for about 1.5 to 2 hours.
