- Brown the beef in a large pot over medium-high heat.
- Remove the beef and sauté the onions and garlic.
- Add the carrots and apples, cooking for a few more minutes.
- Stir in cranberries, thyme, and bay leaf.
- Return the beef to the pot and pour in the beef broth.
- Bring the stew to a boil, then reduce to a simmer.
- Cover and let simmer for about 1.5 to 2 hours.
- Season to taste and serve hot.
