Ingredients

  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries
  • 1 medium apple preferably Granny Smith
  • 1/2 cup pecans chopped
  • 1/4 cup maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup butter or coconut oil melted
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and pierce the sweet potatoes with a fork.
  • Bake the sweet potatoes for 45-60 minutes, or until soft.
  • Allow the sweet potatoes to cool slightly, then slice them in half lengthwise.
  • Scoop out the insides of the sweet potatoes into a mixing bowl.
  • Add cranberries, diced apple, pecans, maple syrup, cinnamon, melted butter, salt, and pepper to the bowl.
  • Mash the mixture until smooth and well combined.
  • Spoon the mixture back into the sweet potato skins.
  • Return the filled sweet potatoes to the oven for an additional 15-20 minutes, until heated through.
  • Remove from the oven, allow to cool slightly, and then serve warm.
