Ingredients
  

  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries
  • 1 medium apple preferably Granny Smith
  • 1/2 cup pecans chopped
  • 1/4 cup maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup butter or coconut oil melted
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Bake the sweet potatoes for 45-60 minutes, or until soft.
  4. Allow the sweet potatoes to cool slightly, then slice them in half lengthwise.
  5. Scoop out the insides of the sweet potatoes into a mixing bowl.
  6. Add cranberries, diced apple, pecans, maple syrup, cinnamon, melted butter, salt, and pepper to the bowl.
  7. Mash the mixture until smooth and well combined.
  8. Spoon the mixture back into the sweet potato skins.
  9. Return the filled sweet potatoes to the oven for an additional 15-20 minutes, until heated through.
  10. Remove from the oven, allow to cool slightly, and then serve warm.
