Creamy Burrata Pasta for a Cozy Night In

Ingredients

  • 400 g pasta spaghetti or fettuccine
  • 2 cups cherry tomatoes halved
  • 4 cloves garlic minced
  • 1/4 cup extra virgin olive oil
  • 1 cup fresh basil leaves roughly chopped
  • 250 g burrata cheese
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  • Cook the pasta according to package instructions until al dente.
  • While the pasta cooks, heat olive oil in a large skillet over medium heat.
  • Add minced garlic to the skillet and sauté until fragrant, about 30 seconds.
  • Stir in the halved cherry tomatoes and cook until they soften, about 4-5 minutes.
  • Add the cooked pasta to the skillet along with chopped basil.
  • If the mixture is too dry, add reserved pasta water a little at a time until desired consistency is reached.
  • Season with salt and pepper to taste, stirring everything together.
  • Serve the pasta in bowls, topping each with burrata cheese, and drizzle with extra olive oil.
  • Garnish with grated Parmesan cheese and additional basil if desired before serving.
