Ingredients

  • 1 pound cooked chicken shredded
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1/2 cup diced onion
  • 1/4 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 –10 corn tortillas
  • Oil for frying

Instructions

  • Prepare the filling by combining the chicken, cheese, onion, cilantro, cumin, chili powder, salt, and pepper in a bowl.
  • Warm the tortillas in a skillet or microwave until pliable.
  • Spoon approximately two tablespoons of filling onto each tortilla, then roll tightly and secure with a toothpick if necessary.
  • In a large skillet, heat oil over medium heat to about 350°F (175°C).
  • Fry the taquitos in batches until golden brown on all sides, about 3-4 minutes.
  • Remove the taquitos from the oil and let them drain on paper towels.
  • Serve hot with your favorite dipping sauces.
