Dip each zucchini slice first in the flour mixture, then in the egg, and finally coat it in Parmesan cheese.
Place the coated zucchini chips in a single layer on a baking sheet lined with parchment paper.
Bake for 20-25 minutes until golden brown and crisp, turning halfway through.
Remove from the oven and let cool slightly before serving.
