Ingredients

  • 2 medium zucchini
  • 1 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 425°F (220°C).
  • Slice the zucchini into thin rounds, about 1/4 inch thick.
  • In a shallow bowl, mix the flour, garlic powder, paprika, salt, and pepper.
  • In another bowl, beat the eggs until well combined.
  • In a third bowl, place the grated Parmesan cheese.
  • Dip each zucchini slice first in the flour mixture, then in the egg, and finally coat it in Parmesan cheese.
  • Place the coated zucchini chips in a single layer on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes until golden brown and crisp, turning halfway through.
