Wash and dry the potatoes thoroughly.
Slice each potato thinly, stopping just before cutting all the way through.
Melt the butter in a small saucepan over medium heat and stir in minced garlic.
Using a brush, spread the garlic butter mixture generously over the potatoes, getting into the crevices.
Season with salt and pepper, then place the potatoes on a baking sheet.
Roast the potatoes for 45-50 minutes, basting occasionally with the melted butter.
Once golden and tender, garnish with fresh parsley before serving.
