Ingredients

  • 2 cups all-purpose flour

  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1/2 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce plus more for drizzling

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Add in the egg, apple cider, and vanilla extract, mixing until well combined.
  • Gradually add the dry ingredient mixture to the wet mixture, stirring gently until combined.
  • Drop tablespoonfuls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes, or until the cookies are set and lightly golden at the edges.
  • Let the cookies cool on a wire rack completely before filling.
  • Once cooled, spread a generous amount of caramel sauce on the flat side of half of the cookies and top with the remaining cookies.
  • Drizzle additional caramel sauce over the assembled whoopie pies for extra sweetness.
