Unroll the crescent roll dough and separate it into triangles.
Place a spoonful of the chicken mixture at the wider end of each triangle.
Roll the dough from the wide end to the tip, encasing the filling completely.
Place the filled bombs on a baking sheet lined with parchment paper.
Brush the tops with olive oil and season with salt and pepper.
