Ingredients

  • 4 salmon fillets about 6 oz each
  • 4 medium potatoes halved or quartered
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Prepare the marinade by whisking together honey, soy sauce, Dijon mustard, olive oil, garlic powder, salt, and pepper in a bowl.
  • In a large baking tray, add the halved or quartered potatoes and drizzle with a bit of olive oil, salt, and pepper. Toss to coat.
  • Spread the potatoes out in a single layer and put them in the preheated oven. Roast for 15 minutes.
  • After 15 minutes, remove the tray from the oven. Place the salmon fillets skin-side down on top of the potatoes.
  • Drizzle the prepared marinade evenly over the salmon fillets and potatoes.
  • Return the tray to the oven and roast for an additional 15-20 minutes, or until the salmon flakes easily with a fork.
  • Remove from the oven and let rest for a few minutes. Garnish with fresh parsley, if desired.
