Ingredients
  

  • 4 salmon fillets about 6 oz each
  • 4 medium potatoes halved or quartered
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the marinade by whisking together honey, soy sauce, Dijon mustard, olive oil, garlic powder, salt, and pepper in a bowl.
  3. In a large baking tray, add the halved or quartered potatoes and drizzle with a bit of olive oil, salt, and pepper. Toss to coat.
  4. Spread the potatoes out in a single layer and put them in the preheated oven. Roast for 15 minutes.
  5. After 15 minutes, remove the tray from the oven. Place the salmon fillets skin-side down on top of the potatoes.
  6. Drizzle the prepared marinade evenly over the salmon fillets and potatoes.
  7. Return the tray to the oven and roast for an additional 15-20 minutes, or until the salmon flakes easily with a fork.
  8. Remove from the oven and let rest for a few minutes. Garnish with fresh parsley, if desired.
