Ingredients
  

  • 1 cup almond flour
  • 1/4 cup erythritol
  • 1/2 cup unsalted butter melted
  • 1/2 cup sugar-free chocolate chips
  • 1/4 cup heavy cream
  • 1/4 cup natural peanut butter
  • 1 tsp vanilla extract
  • Pinch of sea salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, erythritol, and melted butter.
  3. Press the mixture into a lined 8x8 inch baking dish to form the shortbread layer.
  4. Bake for 12-15 minutes or until lightly golden.
  5. While the shortbread cools, prepare the caramel layer by combining heavy cream, peanut butter, and erythritol in a saucepan.
  6. Once combined, pour the caramel over the cooled shortbread layer and spread evenly.
  7. Allow the caramel to set for at least 30 minutes at room temperature.
  8. Melt the sugar-free chocolate chips and pour them over the set caramel layer.
  9. Spread the melted chocolate evenly and let the bars cool completely before cutting.
