Preheat the oven to 400°F (200°C).
Thaw the puff pastry according to package instructions.
Roll out the puff pastry on a lightly floured surface.
Cut the pastry into even squares, about 3 inches each.
Place a dollop of pizza sauce in the center of each square.
Sprinkle shredded cheese and top with pepperoni or other desired toppings.
Fold the corners of each square towards the center, pinching the edges to seal.
Brush the tops with beaten egg for a golden finish.
Sprinkle Italian seasoning over the tops of the bites.
Bake in the preheated oven for 15-20 minutes, or until golden brown.
Remove from the oven and allow to cool slightly before serving.
