Ingredients

  • 2 salmon fillets 6 ounces each
  • 1 cup sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 cup mixed vegetables carrots, cucumber, edamame
  • 1 avocado sliced
  • Sesame seeds for garnish
  • Green onions chopped, for garnish

Instructions

  • Prepare the sushi rice by rinsing thoroughly until water runs clear.
  • Cook the sushi rice according to package instructions.
  • Once cooked, transfer rice to a bowl and mix in rice vinegar and sesame oil gently.
  • While the rice cools, prepare the salmon by seasoning with soy sauce.
  • Cook the salmon in a hot skillet for about 4-5 minutes each side, or until fully cooked.
  • Remove the cooked salmon from the pan, allowing it to rest for a few minutes before slicing.
  • Assemble your rice bowl by placing a generous scoop of rice at the bottom.
