Ingredients
  

  • 2 salmon fillets 6 ounces each
  • 1 cup sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 cup mixed vegetables carrots, cucumber, edamame
  • 1 avocado sliced
  • Sesame seeds for garnish
  • Green onions chopped, for garnish

Method
 

  1. Prepare the sushi rice by rinsing thoroughly until water runs clear.
  2. Cook the sushi rice according to package instructions.
  3. Once cooked, transfer rice to a bowl and mix in rice vinegar and sesame oil gently.
  4. While the rice cools, prepare the salmon by seasoning with soy sauce.
  5. Cook the salmon in a hot skillet for about 4-5 minutes each side, or until fully cooked.
  6. Remove the cooked salmon from the pan, allowing it to rest for a few minutes before slicing.
  7. Assemble your rice bowl by placing a generous scoop of rice at the bottom.
  8. Top the rice with sliced salmon, mixed vegetables, avocado, and a sprinkle of sesame seeds and green onions.
  9. Serve immediately while the rice is warm and enjoy your meal!
