Deliciously Indulgent Stuffed Mashed Potatoes
Stuffed Mashed Potatoes made approachable with clear cues, pantry staples, and flexible swaps.
- 2 pounds Yukon Gold potatoes
- 4 tablespoons unsalted butter
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled bacon
- 1/4 cup green onions chopped
- Salt and pepper to taste
Prepare the potatoes by peeling and cubing them.
Drain potatoes and return them to the pot.
Add butter and sour cream to the drained potatoes and mash until smooth.
Stir in the cheddar cheese, cooked bacon, and green onions.
Season with salt and pepper to taste.
Scoop the mashed potato mixture into a greased baking dish.
