Deliciously Indulgent Stuffed Mashed Potatoes

Ingredients

  • 2 pounds Yukon Gold potatoes
  • 4 tablespoons unsalted butter
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/4 cup green onions chopped
  • Salt and pepper to taste

Instructions

  • Prepare the potatoes by peeling and cubing them.
  • Drain potatoes and return them to the pot.
  • Add butter and sour cream to the drained potatoes and mash until smooth.
  • Stir in the cheddar cheese, cooked bacon, and green onions.
  • Season with salt and pepper to taste.
  • Scoop the mashed potato mixture into a greased baking dish.
  • Bake in a preheated oven at 350°F for about 20-25 minutes until heated through.
