Roll out the puff pastry sheets on a lightly floured surface.
Spread the cheese and spinach mixture evenly over the dough.
Starting from one end, roll the pastry tightly into a log.
Slice the rolled pastry into 1-inch thick pinwheels.
Place the pinwheels on a baking sheet lined with parchment paper.
Brush the tops of the pinwheels with the beaten egg.
Bake in the preheated oven for 15-20 minutes until golden brown.
Remove from the oven and let cool slightly before serving.
