Preheat the oven to 400°F (200°C).
Prepare the beets and carrots by peeling and cutting them.
In a large bowl, combine the cubed beets, sliced carrots, olive oil, honey, salt, and pepper. Mix to coat.
Spread the vegetable mixture on a baking sheet in a single layer.
Roast in the preheated oven for 30-40 minutes, stirring halfway through.
Optional: In the last 5 minutes, sprinkle with fresh thyme for added flavor.
Remove from the oven and let cool slightly before serving.
