Deliciously Sweet Honey Roasted Beets and Carrots

Ingredients

  • 4 medium beets peeled and cubed
  • 4 medium carrots peeled and sliced into rounds
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves optional

Instructions

  • Preheat the oven to 400°F (200°C).
  • Prepare the beets and carrots by peeling and cutting them.
  • In a large bowl, combine the cubed beets, sliced carrots, olive oil, honey, salt, and pepper. Mix to coat.
  • Spread the vegetable mixture on a baking sheet in a single layer.
  • Roast in the preheated oven for 30-40 minutes, stirring halfway through.
  • Optional: In the last 5 minutes, sprinkle with fresh thyme for added flavor.
  • Remove from the oven and let cool slightly before serving.
