Preheat your oven to 400°F (200°C).
Wash and pierce the sweet potatoes with a fork.
Rub the sweet potatoes with olive oil and sprinkle with salt.
Place sweet potatoes on a baking sheet and roast for 45-60 minutes.
While the sweet potatoes are roasting, prepare the apple filling.
In a skillet, heat a little olive oil and sauté the diced apples until soft.
Add cinnamon, nutmeg, and chopped pecans to the skillet with the apples.
Drizzle in the maple syrup, mixing to combine all ingredients, and cook for another minute.
Once the sweet potatoes are done, remove from the oven and let cool slightly.
Carefully slice the sweet potatoes open and fluff the insides with a fork.
Spoon the apple filling into the sweet potatoes and serve warm.
