  • 2 cups grated sweet potato
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract
  • Pinch of salt

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine grated sweet potato, coconut milk, and sugar.

  4. Gradually fold the dry mixture into the sweet potato mixture.
