Method
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine grated sweet potato, coconut milk, and sugar.
- In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually fold the dry mixture into the sweet potato mixture.
- Add vanilla extract and mix well.
- Pour the mixture into a greased baking dish.
- Bake in the preheated oven for 50-60 minutes or until set.
- Allow to cool slightly before slicing and serving.
