Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon pumpkin spice optional

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  • In a large bowl, cream together softened butter and sugars until light and fluffy.
  • Add the egg and vanilla extract to the butter mixture, beating until well combined.
  • Gradually blend in the dry ingredients until just combined.
  • In a small bowl, mix together softened cream cheese and powdered sugar until smooth.
  • Scoop out a tablespoon of cookie dough, flatten it slightly, and place about a teaspoon of cream cheese filling in the center.
  • Fold the cookie dough over the filling and seal the edges. Place on a baking sheet.
  • Repeat with remaining dough and filling. Bake for 12-15 minutes, or until edges are golden.
  • Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
