Preheat the oven to 350°F (175°C).
In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
In a large bowl, cream together softened butter and sugars until light and fluffy.
Add the egg and vanilla extract to the butter mixture, beating until well combined.
Gradually blend in the dry ingredients until just combined.
In a small bowl, mix together softened cream cheese and powdered sugar until smooth.
Scoop out a tablespoon of cookie dough, flatten it slightly, and place about a teaspoon of cream cheese filling in the center.
Fold the cookie dough over the filling and seal the edges. Place on a baking sheet.
Repeat with remaining dough and filling. Bake for 12-15 minutes, or until edges are golden.
Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
