  • 1 ½ cups graham cracker crumbs
  • cup granulated sugar
  • ½ cup unsalted butter melted
  • 16 ounces cream cheese softened
  • 1 cup pumpkin puree
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup whipped cream for topping (optional)

Method
 

  1. Prepare the crust by combining graham cracker crumbs, sugar, and melted butter.
  2. Press the mixture firmly into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth and creamy.
  4. Add the pumpkin puree, powdered sugar, vanilla extract, and spices; mix until well combined.
  5. Spread the cream cheese mixture over the prepared crust evenly.
  6. Chill in the refrigerator for at least 4 hours, or overnight if possible.
  7. Top with whipped cream before serving, if desired.
