Ingredients
  

  • 3 cups mixed dried fruits
  • 1 cup walnuts chopped
  • 1 cup unsalted butter softened
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup dark brown sugar
  • 4 large eggs
  • 1/2 cup orange juice
  • 2 teaspoons vanilla extract
  • 1/4 cup brandy optional

Method
 

  1. Preheat your oven to 325°F (163°C) and prepare your baking pan.
  2. In a large bowl, combine the dried fruits and walnuts, tossing to mix.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the orange juice and vanilla extract, blending until combined.
  6. Sift together the flour, baking powder, cinnamon, and nutmeg in a separate bowl.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Fold in the prepared fruits and nuts until evenly distributed.
  9. Pour the batter into the prepared baking pan, spreading it evenly.
  10. Bake in the preheated oven for 60-75 minutes or until a toothpick comes out clean.
  11. Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack.
  12. Once cooled, feel free to brush the cake with brandy, if using, for added flavor.
