  • 4 boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • Lemon wedges for serving
  • Fresh parsley chopped (optional, for garnish)

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease.
  • Pound chicken breasts to even thickness (about 1/2 inch). Pat dry with paper towels.
  • Set up three bowls: one with flour, one with beaten eggs, and one with Parmesan, panko, garlic powder, Italian seasoning, paprika, salt, and pepper mixed together.
  • Dredge each chicken breast in flour, dip into eggs, then coat thoroughly in the Parmesan breadcrumb mixture.
  • Heat olive oil and butter in a large oven-safe skillet over medium heat.
  • Sear chicken breasts 2–3 minutes per side until golden brown.
  • Transfer skillet to the oven and bake for 15–20 minutes, until chicken reaches 165°F (74°C) internally.
  • Serve hot with lemon wedges and garnish with fresh parsley.
