Prepare the stuffing by combining crab meat, shrimp, breadcrumbs, cream cheese, green onions, garlic, lemon juice, Old Bay seasoning, salt, and pepper in a bowl.
Make a pocket in each salmon fillet by slicing it horizontally without cutting all the way through.
Stuff each fillet with the prepared seafood mixture, pressing gently to secure it in place.
Place the stuffed salmon on a lined baking sheet and drizzle with olive oil.
Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove from the oven and let rest for a few minutes before serving.
