Savory Jamaican Jerk Chicken boasts vibrant spices and a smoky finish, making it an enticing centerpiece for any gathering or casual meal.

Ingredients
  

  • 4 chicken thighs bone-in, skin-on
  • 2 teaspoons allspice berries ground
  • 1 teaspoon thyme dried
  • 1 teaspoon cinnamon ground
  • 4-5 Scotch bonnet peppers seeds removed
  • 4 garlic cloves minced
  • 1-2 tablespoons brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup green onions chopped
  • Juice of 1 lime
  • Salt to taste

Method
 

  1. Prepare the marinade by combining all the ingredients in a bowl.
  2. Place the chicken in a large zip-top bag or a shallow dish and pour the marinade over it.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade, allowing excess to drip off, and place it on the grill skin-side down.
  5. Grill the chicken for about 6-7 minutes before flipping it.
  6. Rotate and continue grilling for another 15-20 minutes, basting with marinade if desired.
  7. Check the internal temperature of the chicken; it should reach 165°F (75°C).
  8. Remove the chicken from the grill and let it rest for 5-10 minutes before serving.
  9. Serve with traditional sides like rice and peas or coleslaw for a complete meal.
