Ingredients
  

  • 16 oz cream cheese softened
  • 1 cup roasted red peppers chopped
  • 1/2 cup olives chopped (mix of green and black)
  • 1/2 cup sun-dried tomatoes chopped
  • 1/4 cup fresh basil chopped
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup walnuts finely chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. In a mixing bowl, combine softened cream cheese with garlic powder, salt, and pepper.
  2. Add in the roasted red peppers, olives, sun-dried tomatoes, fresh basil, and grated Parmesan cheese. Mix well until thoroughly combined.
  3. Once mixed, stir in the finely chopped walnuts for added texture.
  4. Lay a large piece of plastic wrap on your work surface, and spoon the mixture onto the center.
  5. Fold the plastic wrap over the mixture and shape it into a log by rolling and pressing gently.
  6. Refrigerate the log for at least 2 hours or until firm.
  7. Once firm, carefully unwrap the log from the plastic wrap and place it on a serving platter.
  8. Garnish with fresh parsley before serving, if desired.
