Quick Christmas Cranberry Meatballs made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 pound ground turkey
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup finely chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cranberry sauce
  • 1 tablespoon soy sauce

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper.
  3. Use your hands to shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 20 minutes, or until they are cooked through and golden brown.
  5. While the meatballs are baking, prepare the cranberry sauce mixture in a saucepan.
  6. In a small saucepan, combine cranberry sauce and soy sauce over medium heat, stirring occasionally.
  7. Once the meatballs are cooked, remove them from the oven and add them to the cranberry sauce, stirring gently to coat them well.
  8. Serve the meatballs warm, garnished with additional parsley if desired.
