- 1 cup cooked rice
- 1 can 15 oz black beans, drained and rinsed
- 2 ripe avocados diced
- 1 cup cherry tomatoes halved
- 1/4 cup red onion finely chopped
- 1/4 cup fresh cilantro chopped
- Juice of 2 limes
- 1 teaspoon cumin
- Salt and pepper to taste
Cook the rice according to package instructions and let it cool.
In a large mixing bowl, combine the black beans, diced avocados, cherry tomatoes, and red onion.
