Irresistible Marry Me Salmon for a Romantic Dinner

Irresistible Marry Me Salmon for a Romantic Dinner made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients

  • 4 6-ounce salmon fillets
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes chopped
  • 1/2 cup fresh spinach chopped
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh basil chopped (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Pat the salmon fillets dry with paper towels and season both sides with salt and black pepper.
  • In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets, skin-side down, and sear for about 4 minutes until the skin is crispy.
  • Carefully flip the salmon fillets and add the minced garlic to the skillet. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
  • Pour in the heavy cream and stir to combine. Add the chopped sun-dried tomatoes, spinach, Parmesan cheese, and Italian seasoning. Stir until the spinach wilts and the cheese melts, creating a creamy sauce.
  • Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon flakes easily with a fork.
  • Remove from the oven and garnish with fresh basil before serving. Enjoy your Marry Me Salmon with a side of sautéed vegetables or a fresh salad.
