Preheat your oven to 400°F (200°C).
In a large bowl, combine olive oil, maple syrup, salt, pepper, garlic powder, and thyme.
Add the chicken breasts to the bowl, coating them well with the marinade.
Place the cubed sweet potatoes on a large baking sheet.
Drizzle half of the remaining marinade over the sweet potatoes and toss to coat.
Push the sweet potatoes to one side of the baking sheet, making room for the chicken.
Transfer the marinated chicken breasts to the baking sheet on the other side.
Drizzle the remaining marinade over the chicken.
Roast in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Remove from the oven and let rest for 5 minutes before serving.
