Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 cup pure maple syrup
  • 2 large sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh thyme leaves

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine olive oil, maple syrup, salt, pepper, garlic powder, and thyme.
  • Add the chicken breasts to the bowl, coating them well with the marinade.
  • Place the cubed sweet potatoes on a large baking sheet.
  • Drizzle half of the remaining marinade over the sweet potatoes and toss to coat.
  • Push the sweet potatoes to one side of the baking sheet, making room for the chicken.
  • Transfer the marinated chicken breasts to the baking sheet on the other side.
  • Drizzle the remaining marinade over the chicken.
  • Roast in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove from the oven and let rest for 5 minutes before serving.
