Ingredients

  • 2 cups rolled oats
  • 2 cups grated carrots
  • 1 cup Greek yogurt
  • 4 large eggs
  • 1/2 cup honey or maple syrup
  • 1 cup milk dairy or non-dairy
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the oats, grated carrots, baking powder, cinnamon, nutmeg, and salt.
  • In another bowl, whisk together the eggs, Greek yogurt, honey or maple syrup, and milk until smooth.
  • Pour the wet mixture into the dry mixture and stir until just combined.
  • Grease a 9x13-inch baking dish and pour the mixture into it, spreading it evenly.
  • Bake in the preheated oven for 35–40 minutes until set and lightly golden on top.
  • Let it cool for 10 minutes before slicing and serving.
