Ingredients
  

  • 2 cups rolled oats
  • 2 cups grated carrots
  • 1 cup Greek yogurt
  • 4 large eggs
  • 1/2 cup honey or maple syrup
  • 1 cup milk dairy or non-dairy
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the oats, grated carrots, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the eggs, Greek yogurt, honey or maple syrup, and milk until smooth.
  4. Pour the wet mixture into the dry mixture and stir until just combined.
  5. Grease a 9x13-inch baking dish and pour the mixture into it, spreading it evenly.
  6. Bake in the preheated oven for 35–40 minutes until set and lightly golden on top.
  7. Let it cool for 10 minutes before slicing and serving.
