Preheat your skillet over medium heat.
In a bowl, whisk together the eggs, salt, and black pepper until well combined.
Pour the egg mixture into the skillet, then cook undisturbed for 2-3 minutes.
Gently stir the eggs, then add the diced bell peppers and half of the cheese.
Once the eggs are just about cooked through, drizzle in the ranch dressing and stir gently.
Remove from heat, and top with the remaining cheese and chopped green onions.
Serve immediately with extra ranch dressing, if desired.
