- Preheat your skillet over medium heat.
- In a bowl, whisk together the eggs, salt, and black pepper until well combined.
- Pour the egg mixture into the skillet, then cook undisturbed for 2-3 minutes.
- Gently stir the eggs, then add the diced bell peppers and half of the cheese.
- Once the eggs are just about cooked through, drizzle in the ranch dressing and stir gently.
- Remove from heat, and top with the remaining cheese and chopped green onions.
- Serve immediately with extra ranch dressing, if desired.
