Preheat the oven to 375°F (190°C).
In a large skillet, brown the ground beef over medium heat.
Add the diced onion and minced garlic, sauté until softened.
Stir in the diced tomatoes, paprika, salt, and pepper, and cook for a few minutes.
Add uncooked rice and beef broth to the skillet and stir well.
Bring the mixture to a boil, then reduce the heat to low and cover.
Simmer for 15 minutes or until the rice is tender.
Remove from heat and stir in half of the cheddar cheese.
Transfer the mixture to a greased 9x13-inch baking dish.
Sprinkle the remaining cheddar cheese on top.
Bake in the preheated oven for 25-30 minutes.
Let it sit for 5-10 minutes before serving.
