Ingredients

  • 2 ribeye or sirloin steaks about 8 oz each
  • 4 large eggs
  • 1 tablespoon olive oil or butter

Instructions

  • Begin by seasoning the steaks with garlic powder, paprika, salt, and pepper on both sides, allowing them to marinate for about 15 minutes at room temperature.
  • Heat the olive oil or butter in a large skillet over medium-high heat. Once hot, add the steaks, cooking for about 4-5 minutes on each side for medium-rare, or longer to reach your preferred doneness.
  • While the steaks are cooking, crack the eggs into a separate bowl. Once the steaks are done, remove them from the skillet and let them rest on a plate for at least 5 minutes.
  • In the same skillet, you can use the leftover juices and fat to fry the eggs. Reduce the heat to medium and carefully crack the eggs into the skillet. Cook them sunny-side up or over-easy, depending on your preference, for about 3-4 minutes.
  • Slice the rested steaks and plate them alongside the fried eggs. Garnish with fresh parsley if desired, and serve immediately.
