  • 1 pound large shrimp peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Cook the rice in chicken broth according to package instructions.
  2. Melt the butter in a skillet over medium heat and add garlic.
  3. Add the shrimp to the skillet, seasoning with salt and pepper.
  4. Cook the shrimp for about 2-3 minutes per side until they turn pink and opaque.
  5. Stir in lemon juice, mixing well to combine.
