Ingredients

  • 8 oz mushrooms sliced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 slices of bread your choice, but sourdough works great
  • 4 slices of cheese such as Gruyère or cheddar
  • Salt and pepper to taste
  • Fresh parsley chopped (optional, for garnish)

Instructions

  • In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they are golden brown and have released their moisture.
  • Add the minced garlic to the mushrooms and cook for an additional 1-2 minutes until fragrant. Season with salt and pepper. Remove from heat and set aside.
  • In the same skillet, melt the butter over medium heat. Place two slices of bread in the skillet, and layer each with two slices of cheese.
  • Spoon half of the sautéed mushroom and garlic mixture onto one slice of cheese for each sandwich. Top with the remaining cheese slices and close the sandwiches with the other slices of bread.
  • Cook the sandwiches for 3-4 minutes on one side, or until golden brown. Carefully flip and cook for another 3-4 minutes on the other side, ensuring the cheese is melted and the bread is crispy.
  • Once done, remove from the skillet, slice in half, and garnish with fresh parsley if desired. Serve immediately and enjoy the savory richness.
