Ingredients
  

  • 1 cup pumpkin puree
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 8 slices of thick bread like brioche or challah
  • Butter for frying

Method
 

  1. In a mixing bowl, combine pumpkin puree, eggs, milk, vanilla, brown sugar, cinnamon, nutmeg, and salt.
  2. Preheat a skillet or griddle over medium heat and add a pat of butter.
  3. Dip each slice of bread into the pumpkin mixture, letting it soak for a few seconds.
  4. Place the soaked bread slices onto the hot skillet, cooking until golden brown, about 3-4 minutes per side.
  5. Add more butter as needed for subsequent batches, repeating the soaking and cooking process.
  6. Once cooked, serve the pumpkin French toast warm, with your choice of toppings.
