Ingredients

  • 2 cups seafood mix shrimp, crab, scallops
  • 1 cup frozen peas and carrots
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup diced onion
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 package Cheddar Bay Biscuit mix
  • 1/2 cup shredded Cheddar cheese

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large skillet, melt the butter over medium heat. Add the diced onions and sauté until translucent, about 3-4 minutes.
  • Sprinkle flour over the cooked onions and stir to form a roux, cooking for about 1 minute until it’s slightly golden.
  • Gradually add the chicken broth and heavy cream, whisking continuously until the mixture is smooth.
  • Stir in seafood mix, frozen peas and carrots, garlic powder, paprika, and salt, and cook for an additional 5-7 minutes until heated through.
  • Remove from heat and carefully transfer the mixture into a pie dish or baking dish.
  • Prepare the Cheddar Bay Biscuit mix according to package instructions and fold in shredded cheddar cheese.
  • Spoon the biscuit mixture over the seafood filling, making sure to cover it evenly.
  • Bake for 25-30 minutes or until the biscuits are golden brown and the filling is bubbling.
  • Let cool for 5-10 minutes before serving to allow the filling to set.
