Preheat your oven to 400°F (200°C).
In a mixing bowl, combine softened cream cheese, grated cheddar cheese, chopped cranberries, and green onions. Season with salt and pepper to taste.
Roll out the thawed puff pastry on a lightly floured surface until it is slightly thinner and more pliable.
Cut the pastry into rectangles (about 3x5 inches).
Place a spoonful of the filling mixture in the center of each pastry rectangle.
Fold the pastry over the filling and press to seal the edges.
Brush each roll up with beaten egg to achieve a golden finish.
Place the roll ups on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
Remove from the oven and allow to cool slightly before serving.
