Ingredients

  • 2 cups of broccoli florets
  • 2 cups of chopped carrots
  • 1 red bell pepper diced
  • 1 zucchini sliced
  • 4 cloves of garlic minced
  • 1/2 cup of grated Parmesan cheese
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 425°F (220°C).
  • Prepare the vegetables by washing and cutting them into even-sized pieces.
  • In a large bowl, combine the broccoli, carrots, red bell pepper, zucchini, and garlic.
  • Drizzle the olive oil over the mixed vegetables and season with salt and pepper.
  • Toss everything until well coated, then spread the mixture out on a baking sheet.
  • Roast the vegetables in the preheated oven for 20-25 minutes, stirring halfway through.
  • Remove the vegetables from the oven and sprinkle with Parmesan cheese.
  • Return the vegetables to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Serve warm, garnished with fresh herbs if desired.
