Prepare the vegetables by washing and cutting them into even-sized pieces.
In a large bowl, combine the broccoli, carrots, red bell pepper, zucchini, and garlic.
Drizzle the olive oil over the mixed vegetables and season with salt and pepper.
Toss everything until well coated, then spread the mixture out on a baking sheet.
Roast the vegetables in the preheated oven for 20-25 minutes, stirring halfway through.
Remove the vegetables from the oven and sprinkle with Parmesan cheese.
Return the vegetables to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve warm, garnished with fresh herbs if desired.
