Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh cranberries
  • 1 large orange juiced and zested
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon thyme leaves
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side until browned and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add onions and sauté until translucent.
  6. Add minced garlic and thyme, cooking for an additional minute until fragrant.
  7. Stir in fresh cranberries, orange juice, and orange zest.
  8. Pour in the chicken broth and bring to a simmer.
  9. Return the chicken to the skillet, spooning sauce over the top.
  10. Simmer for an additional 5 minutes, allowing flavors to meld.
  11. Serve hot, garnished with additional thyme if desired.
