Savory Spinach and Feta Stuffed Chicken Breasts

Savory stuffed chicken with spinach and feta brings delightful flavors and a tender texture, making it an ideal dish for elegant dinners or festive gatherings.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup chicken broth or wine for baking

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the filling by heating olive oil in a skillet over medium heat and sauté the garlic until fragrant.
  3. Add the chopped spinach and oregano to the skillet, cooking until the spinach wilts down, about 3-4 minutes.
  4. Remove the skillet from heat and stir in the crumbled feta cheese, season with salt and pepper to taste.
  5. Carefully butterfly each chicken breast, creating a pocket for stuffing.
  6. Stuff each chicken breast with the spinach and feta mixture, then secure with toothpicks if necessary.
  7. Season the outside of the chicken breasts with salt, pepper, and a sprinkle of oregano.
  8. Place the stuffed chicken breasts in a baking dish and pour chicken broth or wine over the top.
  9. Bake the chicken for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  10. Remove from oven, let rest for 5 minutes before slicing.
