In a large bowl, combine the cubed sweet potatoes, olive oil, brown sugar, cinnamon, salt, and nutmeg.
Transfer the mixture to a baking sheet lined with parchment paper.
Roast in the preheated oven for 25 to 30 minutes, stirring halfway through.
Once done, check for doneness; the potatoes should be fork-tender and slightly caramelized.
Remove from oven and garnish with fresh parsley before serving.
