Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup unsulfured molasses

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, whisk together flour, baking soda, spices, and salt.
  • In another bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and molasses, mixing until fully combined.
  • Gradually integrate the dry mixture into the wet ingredients until just combined.
  • Refrigerate the dough for at least 30 minutes to an hour.
  • Roll out the dough on a floured surface to desired thickness, then cut into shapes.
  • Place cookie shapes onto lined baking sheets, spacing them out.
  • Bake for about 10-12 minutes, or until the edges are firm but the centers are soft.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks.
